Everyday life is hectic enough without setting aside a lot of time to prepare home cooked meals every day of the week, a few times a day. This is especially true when a food related holiday comes around, which happens several times a year. Some of us cook very large meals on those occasions, or at least help with them. The very last thing we want to do, is worry about the meal immediately after that beautiful feast…Next Morning Breakfast!
We worked hard for an entire day (OR 3!) for a family gathering, no matter how small. The preparing/cleaning up of the “feast” is what takes the time and energy straight out of us. No way in hell do we want to consider cooking again for the next couple of days!
However, you still have a hungry family/guests the next morning. They become wild animals if you miss a feeding, ya know!

Taking the stress out of breakfast…
Here are some of my favorite ways of dealing with breakfast the next day, without loosing my mind. Some are meals you can prepare and refrigerate ahead of time. However, if that is not an option, I’ve also included some quick hacks for getting breakfast together with little stress in the morning. These recipes, of course, are good for anytime of the year. The holiday gatherings just happen to be on my mind at the moment…thought I would share!
1. Baked (Or Stovetop) Frittata
I absolutely love frittatas. I have made them using a variety of ingredients. They are stupid easy to make, and with even 10 minutes, you can create a fabulous breakfast dish to get everyone’s energy pumping. Do you ever have leftover meat already cooked? Fresh spinach, broccoli, zucchini, shredded cheese, etc.? Oh yeah…you got this! Just add the eggs and dairy. One of my favorites is cooked ham, shredded cheese, and broccoli. Another involves roasted red peppers, onion, cheese. Another, just shredded cheese and fresh spinach. I could go on!
I personally prefer the bake method with this. One larger mixing bowl with all ingredients combined together. One small (approx. 12″ x 12″) baking pan. Cooking spray. Oven at 350 degrees for about 30-40 minutes. DONE.
2. French Crepes
Once I learned how to make crepes, I started experimenting with all of the different fillings I could think of…anywhere from fruit and syrup sort of fillings, to a heartier egg and meat mixture. The crepes have a nice balanced, thin yet, fluffy texture. The flavor can be modified for sweetness and the possibilities are endless. This is more of a hands on recipe, but well worth it for a few extra minutes of patience. It’s also different for most folks..a bit out of the “norm”.
3. Cheesy Sausage Breakfast Casserole
I like this recipe primarily, because it is satisfying and can be prepared the night before if need be! It comes out nice and moist and the flavors fall in love exactly as they should. Definitely a crowd pleaser that takes little effort!
4. Breakfast Burritos (or Tacos)
This is a hearty, satisfying breakfast. The method is a very efficient one that I have gone to, often. The bacon can be left alone for 20 minutes to cook in the oven, which allows you to get started on the eggs. The assembly of the burritos, takes but a few minutes, and they can be frozen ahead of time for more hectic situations!
I don’t make these guys ahead of time exactly, because I prefer a little added to the burrito. I typically will add a bit of fresh spinach, perhaps a bit of sour cream, and a Simple Tomato/Avocado salad ( below) ...Mmmm…Good!
5. Easy Tomato/Avocado Salad
When I can get a hold of good ripe tomatoes and avocados, I will use this salad every single time eggs are involved. It takes absolutely no time to make. For my own preferred freshness, I typically won’t make it until at least 2 hours prior to serving. I am picky. It is known.
I also don’t bother with the lime juice or garlic. It is straight up tomato, avocado, kosher salt, pepper, and olive oil.
(Tip: when stirring the ingredients together, be gentle so as not to create an avocado mush!)
6. Cinnamon Roll Monkey Bread Bake
Holy Mother Of Diabetes!
Don’t care. This is far too good to pass up. It involves virtually no prep, cooks on it’s own, and will satisfy every sweet tooth in the family. Love this recipe!
7. Quick & Easy Oven Baked Home Fries
This is the preferred method of cooking home fries for me, these days. Instead of standing at the stove, I mix my ingredients up in a bowl, spread the mixture evenly throughout a greased (cooking spray) baking sheet, and let the oven do the rest. You can spend your time working on the other food you are trying to add to the meal!
Things Of Note: I prefer Olive Oil over Vegetable Oil. I also prefer to mix all of the ingredients in a bowl before transfer to the baking sheet. The reason is that the potatoes and vegetables will be more evenly coated with the oil if tossed first.
8. Air Fryer French Toast Bites
I, personally will take Take French Toast over Pancakes, any day. Sometimes, I’m not in the mood for eggs…just that simple. I want something a bit sweeter. This recipe is perfect for satisfying that craving with very little work. The fact that the fryer does the hard work for me, makes it even more enticing!
9. Easy Ham, Cheese, Spinach Quiche
I love Quiche. I have made various types…a few that have involved meat and a few that are just vegetarian. It can be prepared a day or two before, and warmed up later. Add a bit of sour cream to the side and the flavors explode. There are no right or wrong ingredients for this creation. Anything goes, as does timing of day for serving! Easy Peasy!
10. Hash Brown Egg and Cheese Egg Cups
Everything you want in a traditional Omelette, but in finger food style! I may even add a tad bit of finely diced onion and green pepper, to enhance the flavor. Regardless, this is a very easy breakfast option that requires little work. It is without a doubt, a crowd pleaser!
11. 20 Breakfast Charcuterie Board Ideas
One great thing about a Charcuterie Board is that you can somewhat prepare ahead of time, with the more time consuming steps. You can hard boil the eggs, get them peeled the day before, and set aside for the morning. The bacon cooks on it’s own in the oven in the morning. This means you can take all of 20 minutes to assemble the remainder of the board (i.e fruits, cheeses, cured meats, croissants, jams, etc.) and create a delicious, inviting breakfast, no matter how big or small the crowd.
12. Bacon, Potato, and Egg Casserole
Of course, the only thing I change with this recipe, is how I cook the bacon. I always prefer to cook my bacon in the oven. All you have to do is line a baking sheet with parchment paper, and lay each strip of bacon out on the tray. Heat the oven to 350 degrees and let it do it’s thing for about 20 minutes. You can spend that time preparing the egg mixture. It is a hit with the group and doesn’t involve much prep or clean up!
13. Overnight Apple Pie Baked French Toast
I’m drooling just looking at these photos! This is a super delicious recipe that will blow breakfast straight out of the water. It’s everything you’d want in an apple pie…pie filling, apple pie spice, cinnamon, and brown sugar. Combine that with all of the tasty aspects of french toast with maple syrup, and wow! Easy to prepare ahead and a winner with the family!
14. Brunch Ham Enchiladas
Mmm. Ham, cheddar, eggs, and green onion rolled into one yummy enchilada, topped with more melted cheese! What else do you need for a quick, but hearty breakfast? Easy to make and really delicious! Yum!
15. Seasoned Biscuits And Gravy Bombs
Biscuits and gravy is such a popular breakfast dish and for good reason! It’s hearty, creamy, and delicious comfort food all the way around. This recipe combined all of the same tasty ingredients into an easy to grab biscuit bomb. They are super easy to make and are the perfect on-the-go breakfast option!
16. Monte Cristo Breakfast Casserole
Mmm…this recipe is definitely one that will blow the family away! Ham, turkey, cheese, and eggs baked to perfection and topped with confectioner’s sugar and raspberry preserves. It is easy to put together, can be made ahead of time, and is a delicious way to start the day. Yummy!
17. Homemade Apple Fritters
These apple fritters are yet another sweet way to start the day off! Filled with chunky apple bites and topped with delicious glaze, these grab and go breakfast delights will keep you going all morning long! They are easy to make, chewy and yummy!
18. Chicken And Waffle Sliders
Chicken and waffles in bite size…yes, please! The only real work involved with these delicious little sliders, is the cooking of the chicken. Everything else is just quick assembly and a tasty maple syrup drizzle. Absolutely delicious and hearty beginning to the day! Yum!
19. Cinnamon Raisin Biscuits
These biscuits are certain to be a favorite breakfast option in your home! Cinnamon, raisins and a yummy glaze topping…so good! They are easy to make ahead of time, easy to grab, and it will keep you going all morning long!
20. Breakfast Apple Nachos
I have not tried this recipe yet, but I simply could not pass by it when I saw it. This is such a delicious and unique breakfast option the whole family will love! Sliced apples, peanut butter drizzle, granola, and chocolate morsels…what more could you ask for? This recipe is super easy to make and will certainly rise to the top of your favorites list. Yum!
