Easy Hearty Cheesy Bacon & Spinach Omelette Recipe For Breakfast Or Brunch!

Do you have the same love for a hearty breakfast omelette as I do? Are you really skilled at making omelettes, but are lacking a bit of inspiration as to what recipe to try next? Are you instead, a beginner looking for a few tips on how to make the perfect omelette?

My husband recently made an omelette for me, that was just yummy deliciousness all the way through every last bite. (Let’s just say there were no little crumbs really for our puppy friends to enjoy!) I have to talk about it, and pass along a few pointers for really good omelette cooking.

The Perfect Omelette…

For as many skills as I have learned in the kitchen when it comes to cooking, I have never actually been able to perfect the art of making an omelette. I have tried many times over, and for whatever reason….I simply just can not seem to get the outcome I am looking for. Obtaining an even balance of crisp, fluffy, cheesy, moist yet, crunchy aspects of the perfect omelette, requires a bit of patience and time.

I can get the right combination of flavors together. That’s not the problem. My taste buds know exactly what they are looking for!

The prep work is not a problem. Finding the right pan is not the problem, nor is knowing when the pan is hot enough to pour in my mixture.

The point it becomes a bit difficult for me is determining exactly when the center part of the mixture and side edges are at the right temperature, so I can begin lifting the edges of the mixture around the pan.

That’s only the first trick to cooking a really good omelette!

Choosing the right kitchen utensil to use for the lifting and turning, can also be tricky. Getting those edges around the pan to lift without turning your creation into a scrambled egg hash, is the next step to master. Even when you have the skill for accomplishing that area of expertise, you have to be able to carefully turn one side of the omelette over the other to create that all anticipated burrito of goodness.

That is exactly why my husband gets the job of cooking omelettes around here.

Maybe you are already a master omelette maker in your own right, or maybe you are just starting to learn the art. Regardless, the following recipe will not only provide ingredients and instructions for a hearty breakfast, but it will also provide a few wise cooking tips along the way. You will certainly come out with perhaps a bit more perspective, or just a bit of inspiration for the next omelette you choose to make!

Cheesy, Spinach, Bacon Omelette (w/ Tomatoes, Sour Cream, & Home Fries On The Side)

Ingredients You Will Need (for 1 Omelette. Double ingredients as needed.)

– Salt (Kosher Salt recommended)

– Black Pepper

– 1/4 cup Shredded 3 Cheese Blend (cheddar, monterey jack, colby)

– Grated Parmesan Cheese

– 2 Eggs

– 1 1/4 cup Fresh Spinach (slightly cooked & wilted)

– 3 Slices Cooked Bacon

– 3-4 ounces Finely Chopped Green Pepper

Ingredients (For The Sides)

– (3-4 ounces) Finely Chopped Tomato

– 2 ounces Sour Cream

– 2 Small Yukon or Red Baby Potatoes (cut in quarters and cooked)

– Ketchup or Hot Sauce (optional)

Step By Step Instructions (Omelette)

1. Turn your burner on to medium-high and begin preheating a pan for the spinach and bacon.

(If you plan to cook your bacon/potatoes in an oven, set the oven to 375 degrees and let it preheat in addition to the pan)

2. While the pan/oven are preheating, Dice 1/3 of a green bell pepper and set aside

3. Dice 1 roma tomato or 1/3 of a larger tomato. Set aside.

4. Crack 2 eggs into a small mixing bowl.

5. Add green pepper to the mixing bowl and whisk into the egg. Set aside.

At this point, the pan/oven should be at temperature to begin cooking.

(Tip: You should feel a nice warm heat when holding the palm of your hand 4-5″ above the pan.)

6. Add 1 tablespoon olive oil to the hot pan. Add the spinach and a dash of kosher salt.

(Toss every 60 seconds until slightly wilted (2-3 minutes total). Slightly drain the spinach and transfer it to a bowl. Cover.)

7. Add 3 slices of bacon to the same pan and begin cooking, flipping the bacon every 2-3 minutes until desired crispness (About 10 minutes total).

8. While the bacon is cooking, preheat a large shallow saucepan for the omelette.

9. When the bacon is finished, cut the strips into bite sized pieces. Set Aside on a double folded paper towel.

10. Coat the inside of the large preheated shallow pan, with cooking spray. Add the egg mixture to the pan, tilting the pan around slowly so that the sides of the pan create a very light egg washed edge.

11. Evenly spread over the center the pan, the cooked spinach, bacon, and shredded cheese.

12. Once the egg washed sides form a slight crusty edge, take a spatula to skim along the sides of the pan to prevent sticking.

13. Once the center cheese is half melted, gently lift one side of the omelette away from the side of the pan and begin turning it in toward the center with your spatula or fork. Flip the same side once again until a burrito like shape forms. Let it cook 30-45 seconds longer.

14. Transfer to a plate and top with fresh parmesan cheese.

15. Add the side of sour cream, home fries, tomatoes, and ketchup, etc.
