Easy Delicious Breakfast Recipes & Brunch Ideas For A Crowd

Mornings in general, can be very hectic, but it gets to be even trickier when you have company. Considering the holidays are upon us currently, I imagine many of us will be in charge of feeding larger crowds over the next couple of months.

Because breakfast is the most important meal of the day, I thought I’d put together a list of my favorite breakfast and brunch options for those times when you do have additional mouths to feed, but are low on time and attention.

All of these recipes and breakfast ideas are easy to make and can be prepared in advance, in most cases. Wouldn’t it be lovely to know you can greet your guests in the morning with a delicious meal to start their day, and you didn’t have to be up at the crack of dawn in order to pull it off?

Even without company, any of these recipes will be a nice change up for the busy weekdays, and your family will love you for it. Promise!

Casseroles And One Pan Dishes

1. Cheesy Sausage Croissant Casserole

Of course, you can’t go wrong with the basic ingredients of this recipe…cheddar, sausage, croissants, eggs, and scallions.

If you do want to take it any further, simply change up or add some fresh veggies to the mix and maybe even top with a bit of sausage gravy. You can make and freeze it for up 3 months, and it is a breakfast option everyone will love.

2. Deep Dish Loaded Hash Brown Casserole

This recipe had me with the eggs, cheese, bacon, and hash browns. When you add in the onion, sour cream, and garnish of cherry tomatoes and scallions, wow!

Everything you want in any traditional breakfast, in one quick easy bake. Yummy every time!

3. Ham & Cheese Grits Casserole Bake

Mmm…creamy grits, scrambled eggs, shredded cheese, and diced ham. Make ahead of time, and make your morning easy with this delicious casserole. Yes please!

4. Amish Style Cinnamon & Apple Baked Oatmeal Casserole

I have always been a huge fan of old school Quaker Apples and Cinnamon instant oatmeal, so this recipe totally got me stoked.

Not only is it so much better than the package option, but it takes no time to throw together for a quick, soul warming breakfast. Make the night before and pop it into the oven in the morning.

Quick. Easy. Delicious.

5. Slow Cooker Cinnamon Roll Casserole

Who doesn’t like cinnamon rolls, especially when they are fresh and warm?

This recipe requires very little time for prep, but includes all of the delicious ingredients you could ask for…cinnamon, biscuits, brown sugar, powered sugar, vanilla, and cream cheese.

Combine the ingredients as directed and let your slow cooker do the rest!

Yummy, gooey, goodness. 😋

6. Stuffed Ham & Cheese Croissant Casserole

I love a good ham and cheese croissant sandwich, so this recipe is at the top of my favorites. This casserole is loaded with diced ham and shredded swiss cheese, giving you a creamy bite every time.

Top with a bit of green onion and enjoy! Definitely a recipe the whole crowd will love.

7. Breakfast Enchilladas

When you want to add a little zing to the morning start, this recipe is the perfect choice. Stuffed with ground pork, scrambled eggs, salsa, and a shredded cheese blend, these delicious enchiladas are easy to make and can be prepared the night before.

Top with creamy Salsa Verde, avocado, tomato, and green onion for the final touch and enjoy. Yum!

8. Blueberry Marscapone Stuffed French Toast Casserole

When I first came across a recipe for this delicious breakfast casserole idea, I found it to be a bit intimidating and time consuming. However, this recipe is so easy, there’s no reason not to enjoy it!

Using store bought baguettes for the base instead of homemade bread, certainly eliminates quite a bit of work.

Stuff with creamy marscapone cheese and blueberry filling, and oh my…out of this world!

Best part is it has to chill in the fridge overnight, so you are kind of forced to take it easy in the morning 🙂 Works for me!

9. Individual Baked Eggs

Such a mouth watering breakfast idea, but so easy to make! This recipe just involves a muffin pan, a handful of quick ingredients, and a few minutes of time.

These delicious bacon, egg, and cheese bites make great grab and go breakfast options, and they will satisfy your taste buds every single time.

10. Eggs Benedict Casserole

Mmm…Eggs Benedict, but without all the fuss. This recipe requires just a few minutes of prep time, a mix of quick ingredients and a drizzle of delicious Hollandaise sauce.

Top with chopped scallions or chives, and an additional poached egg if desired. This breakfast dish is sure to be a hit with everyone!

Breakfast Boards & Brunch Spreads

1. Build Your Own Waffle Board

This delightful breakfast board includes everything you could possibly want in a waffle breakfast! Aside from the warm waffles, this board features crispy bacon, chicken bites, and a variety of fruit for a sweeter aspect.

Add sides like peanut butter, nutella, honey, maple syrup, chocolate chips, and whipped cream for the full waffle experience.

2. Bagel Board

Now this is a bagel board I can get behind, as there’s no lack of options! With a variety of bagel flavors, bacon, salmon, and cream cheese, this board has all of the protein basics covered.

With a variety of fresh fruit, jams, spreads, and drizzles, the sweeter side of the board is also adequately covered. Definitely a spread even the pickiest of eaters, will enjoy.

You’ve probably already guessed one of the reasons I love this board idea…yes, it’s the use of one of my favorite types of bread…baguettes. I can’t tell you have many times I have enjoyed breakfast crostini!

This board idea comes with all of the savory breakfast options you could want, including avocado, bacon, fried eggs, and cherry tomatoes.

Add a bit of fresh fruit on the side, along with a few spreads and jams for a sweeter finish. Perfect breakfast or brunch spread for a crowd!

4. Build Your Own Breakfast Taco Board

Tacos are another type of breakfast food we enjoy often in this house.

Start your spread off with some of the basic ingredients like scrambled eggs, sausage, bacon, avocado, salsa, refried beans, and warm tortillas.

Add shredded cheese, salsa, pico de gallo, and jalapeno peppers for additional garnishing. Delicious way to start your day off!

5. English Muffin Breakfast Board

Some of us prefer bagels and some of us prefer English muffins for breakfast. I personally, am more of an English muffin fan. There is just something so satisfying about those airy little pieces of bread that make my heart happy!

Did someone say, Burrata? Totally there!

I love burrata with a yummy read sauce on crostini any day of the week, so this board is right up my alley. With the addition of scrambled eggs, roasted tomatoes, home fries, and the homemade Romesco sauce, I’m in heaven.

This mouth watering breakfast board was definitely created with the meat lover in mind. With sausage, bacon, salami, and three cheeses to choose from, you can come up with numerous hearty combinations to satisfy your morning appetite.

I use to manage a Bed & Breakfast years ago, and this spread was a favorite of mine to put out for Sunday brunch hour.

Creamy yogurt, crunchy granola, a variety of fresh fruit and drizzles, so you can create your own delicious breakfast treat.

Add a few muffins or pastries on the side, and you will have very happy eaters in the morning!

Bacon, sausage and/or ham for the meats, hard boiled eggs, and fresh vegetables for additional toppings. Include a few sweeter jams and spreads, along with donut holes or other pastries, and you have a little something for everyone all in one space.

Quick, easy, and can be mostly prepared ahead of time.

Prosciutto naturally compliments peaches, so these muffins will definitely be a hit. Perfect sweet and savory breakfast option in one easy to grab bite. Yum!

8. Savory Breakfast Mini Cheesecakes

I love a good cheesecake anytime, and these savory bites don’t disappoint.

With very little time, you can whip up these mini cheesecakes that involve eggs, red peppers, onions, bacon, ham, cream cheese and gruyere.

Soo good and creamy. So easy to make. Perfect for a crowd!

9. Sausage & Egg Breakfast Taquitos

Taquitos are another easy grab and go breakfast option for crowded holiday gatherings or busy weekdays. They can be made ahead of time, and warmed up in a snap.

This recipe is a traditional combination of sausage links, eggs, and cheese. Nothing fancy. Just good, homestyle bites to start the day off.

10. Ham, Egg, & Cheese Breakfast Sliders

Mmm… good ol’ ham, egg, and cheese sliders, but in larger batch form for a crowd.

These sliders are made with sweet Hawaiian rolls, provolone cheese, and a bit of yellow mustard for a slightly tangy cheesy breakfast option everyone will love.

Easy to make and prepare ahead. Always a hit with the crowd. Yum!

Final Thoughts

Breakfast doesn’t have to be complicated as these recipes have shown. You can serve up a delicious meal in the mornings without overthinking it or spending too much time on it.

Between all of the sweet and savory options above, you can easily find a breakfast option to satisfy an entire crowd without a bunch of fuss.

I personally, am a big fan of the casseroles and board ideas. They seem to be the most flexible when it comes to flavor combinations.
